Mini berry trifles are a wonderful way to celebrate the bountiful berry season during the summer. Super easy to make and perfect for those who want to have a little portion control but still indulge in a some berries and cream sweetness. I found some cute Turkish coffee cups at World Market which are around 3 inches high, perfect size for these mini berry trifles or any mini desserts actually. Four layers of petite yumminess make up these mini berry trifles starting with crushed vanilla Oreos, vanilla pudding, berries and a generous dollop of fresh whipped cream. I mean really who could say no to such a pretty and delectable cup of sweetness. I’ve been serving these desserts up to the younger crowd in the family and I’m happy to say that these mini berry trifles have been getting a resounding thumbs up!
Putting these little delights together is simple enough that this would be great dessert to make with the little ones. My youngest had the best time smashing the vanilla Oreos with my rolling pin, great way to release any tensions! For each mini berry trifle cup I used one vanilla Oreo, you could use any other type of vanilla cookie, place it in a Ziploc sandwich bag and smash away until the cookie is a crumbled up. Scoop into each cup and layer some vanilla pudding or pastry cream. I was in a rush so I used Jello vanilla pudding mix to make 2 cups of vanilla pudding. Instead of using 2 cups of milk, I used 1 cup of 2% milk and 1 cup of heavy cream to make it extra indulgent. If you can put the vanilla pudding in a piping bag with a wide nozzle as it’s a little tricky spooning a mixture into such tiny cups. Finish up with berries or any other fruit of your choice and fresh whipped cream. To make a day prior, put together the Oreo and pudding layers and the next day add the fruit and whipped cream before serving. I’m sure you’ll have some very happy guests if you serve these at your next gathering.
