A simple life with a touch of indulgence now and then, who isn’t striving for that sweet spot and if comes in the form of a bowl of delectable mango ice cream I think we would all be quite happy with our existence. This tropical mango ice cream is made from a mere 4 ingredients with no ice cream machine involved sounds too good to be true but it is. You will truly the most popular host if you serve this at your gathering. Sssh no problem we just won’t tell anyone how super easy it is to make and so pretty to look at. I mean look at that contrast in colors so forgive me if this post is full of pics, I couldn’t contain my visual excitement!
This mango ice cream celebrates the amazing mangos found in India and Pakistan, you really must try them if you can get you hold of them combined with my favorite spice, the aromatic cardamom. The four ingredients used are heavy cream (please not the can kind!), condensed milk, mango pulp (easy to find at an Indian store) and crushed cardamom seeds from 3 to 4 pods. The base of the mango ice cream is a combination of heavy cream whipped to perfection and a can of condensed milk which is gently folded into the whipped cream. Using a loaf tin or freezer proof container, spoon a layer of the cream mixture, cardamom powder from 1 pod and a tablespoon or two of mango pulp. Keep repeating the layering process until all of the cream is used up. The final layer should mango pulp which I randomly spooned over the top and then taking a skewer ran through the top for a beautiful rippling effect. Cover tightly and put in the freezer overnight or at least 6 hours.
