It’s been a bit tricky in our household. See it’s all good and well to declare that you’re becoming healthy, the challenge ensues to find something to cook especially without too much emphasis on bread and rice. Chili chicken lettuce wraps to the rescue! These wraps are a beautiful blend of Indo Asian flavors which provide a meal that is healthy, tasty and quick to make..score! Prep to plate it took me around 30 minutes. Hubby was so happy with these chili chicken lettuce wraps that he suggested we eat these everyday. Okay well love the enthusiasm but I think variety is key for a happy plate. For sure I do recommend these for a weekly rotation in your kitchen.
I used boneless leg and thigh chicken because it just tastes so much better but feel free to substitute with chicken breast. Cut into small bite size pieces and quickly stir fry. Put together a plateful of butter lettuce and spoon on the chicken to make the best chili chicken lettuce wraps with that extra kick. What’s the secret ingredient? A very generous portion of sambal oelek, to be found in handbag of every aunty from the Indian subcontinent when they come to visit your house because your food is sooo bland (rant over!). But really sambal oelek or any other red chili garlic sauce really has some special magic spreading spicy happiness over your dish.
Dial the ingredients up or down a notch according to your tastebud’s desire. This chili chicken is also great with a steaming bowl of jasmine rice or some warm naan. Yeah don’t tell my hubby I’ve been carbing on the side!
