There’s such a comforting feeling when you step into a home with the inviting aroma of freshly baked goods. We’ve been busy today baking Blueberry Muffins and our home just smells so wonderful, it definitely beats spraying with some air freshener! My little ones love blueberry muffins so with the bountiful array of berries available it was off to the market and then diving in for some serious mother daughter bonding time.
These blueberry muffins can rival those found at your local bakery with a soft texture inside and a lovely crumbly topping. I used fresh blueberries as they are in their prime right now but you can also substitute in frozen as well. The key ingredient to make these blueberry muffins soft is buttermilk. If you don’t have buttermilk, it’s super easy to make just mix 1 tbsp of white vinegar with 1 cup of milk set aside for 15 minutes and it should be ready to use. Alternatively you can also use some yogurt for this recipe, just mix 3/4 cup of plain yogurt with 1/4 cup of milk and substitute for the buttermilk required in the recipe. Another quick tip is to make sure you don’t over mix your the muffin batter as this will produce too much gluten and make a denser blueberry muffin.
Mix the dry ingredients fist and set aside. Whisk the wet ingredients starting with the egg and buttermilk and then the remaining wet ingredients. Pour the wet ingredients into the flour mixture and gently fold in the ingredients. Toss the blueberries in a little flour so they are lightly coated and add those to the mixture too. Gently mix together until combined and definitely don’t over mix unless you want some rock hard muffins for use in target practice! Once mixed put the batter into a muffin tray, this batter is enough for 12 regular sized muffins. Cover the batter with the crumble topping. The muffins should take around 35 minutes to bake or until a toothpick comes out clean when inserted in the center of a muffin.
